About Chef José del Castillo
After studying journalism and business administration, José entered the D’Gallia Institute at 28 years old, where he discovered his true passion: traditional and homemade Peruvian cuisine. In 2001 he took over “La Red”, his mother, Isolina Vargas' restaurant, founded in 1981. Under his leadership, the restaurant became a benchmark of Lima's gastronomic circuit, consolidating in 2009 with the opening of a second location. Fish and seafood dominated the menu while staying true to its Creole origins. In 2015, Isolina opened its doors, a tribute to José's mother, whose culinary ethos is about rescuing the flavors forgotten in old cookbooks and to highlight the food of yesteryear. Currently, José is working on this adventure, always thinking about the next meeting point for those who like to eat delicious food around a good table.
