The Experience

Experience Flavors & Spirits of Etéreo: an enriching epicurean journey through food and spirits designed to elevate the senses through rotating chef residencies and bar collaborations throughout the year. Guest chefs will unite with Etéreo's culinary team to craft inventive cuisine centered around the local abundance of the land and sea, while bar collaborations will feature distinctive mixology techniques, integrating native ingredients and rare libations from various regions across Mexico.

Elevate your spirit and gather with us for our second iteration of the Flavors & Spirits of Etéreo series as we welcome Employees Only from October 28th to November 6th for a collective experience in collaboration with the legendary speakeasy. Employees Only has been a pioneer of the craft cocktail renaissance in New York City and will now make a noteworthy stopover at Etéreo. Known for their old-world ambiance and classic, elevated cocktails with a twist, join the experience as Employees Only bartenders Frank Maldonado and Bryan Cortes shake things up with a hyper-local Mexican interpretation at our ethereal Riviera Maya retreat.
  • Join us nightly at Che Che, where craft cocktail slinging materializes to the sound of live music. Exclusive Employees Only at Etéreo cocktails are centered around celebrating the region’s best spirits, such as raicilla and Mexican gin, and handcrafted using time-honored techniques.

Saturday, November 5th

Following The Lost Explorer mezcal journey, connect over a shared dining and spirit experience entirely unique to the region of Oaxaca, which is known as Mexico’s culinary capital. We are delighted to welcome the admired Beatriz Vázquez Gómez to Etéreo, who attracts crowds of food enthusiasts to her local market restaurant, La Cocina de Frida. Bearing a striking resemblance to Frida Kahlo, Beatriz embraces the similarity by dressing in colorful clothing with fresh flowers ornamenting her hair. As an artist in her own right, Beatriz is a local treasure and has a natural-born talent for working with aromas and flavors. In this hyper-local, one-off experience, she will collaborate alongside Executive Chef Miguel Baltazar to prepare her beloved Oaxacan specialties, such as her celebrated mole coloradito. Return home with a story of an incomparable spirit and culinary journey.

Celebrate with us as we kick off the Employees Only at Etéreo collaboration at Che Che. Thoughtfully crafted signature cocktails will carry you late into the night while live DJ beats heighten the room's vibrant energy. Connect with friends in an open-air atmosphere with an idyllic Mexican twist on a traditional New York speakeasy. Conclude the night by soothing your soul with a warming mug of Employees Only Etéreo-inspired chicken soup.

Join together for an age-old Dia de Los Muertos party at Che Che in celebration of Employees Only at Etéreo along with The Lost Explorer Mezcal. Rooted in ancestral origins and ancient Mexican history, this centuries-old tradition is unique in that honoring the dead is a joyful occasion of festivities. Celebrate under a stellar night sky for an authentic fête brimming with décor, live music while you sip on prohibition-style cocktails with a splash of regional inspiration, including exclusive The Lost Explorer Mezcal cocktails specially curated.

Frank Maldonado

Originally from Guatemala, Frank worked his way up in many of the NYC’s top cocktail bars throughout his career before finding a home at EO in 2015. He now leads the bar team as Bar Manager and continues to build on the traditions of EO New York’s world-class bar program.

Bryan Cortes

Bryan grew up in Orange County, California, and moved to New York City at 18, where he began his journey in the hospitality industry. He has been integral to EO's success since joining the team in 2016 and relishes his role as Principal Bartender, where he prides himself in giving back to the next generation of Apprentice Bartenders.
