Kick-off this incredible weekend with a cocktail class hosted by our very own Orlando, who will demonstrate his tips and tricks to using ingredients found in your own backyard to take every cocktail to the next level. Then, join Chef Mads at an intimate reception to learn about his career, techniques, and new endeavors. *Exclusive to Three-Night package guests

Thursday, October 1

Join Chef Mads and expert forager Tama Matsuoka Wong on this once-in-a-lifetime experience, where you’ll explore the rolling countryside around the Inn, find mushrooms, wild berries and herbs. This interactive excursion will focus on how to identify edible plants, learn the best techniques for harvesting and how to make your found ingredients delicious. *Available for 3-day and 2-day packages

Friday, October 2

Start your day with a yoga session in our spa to clear your mind and awaken your soul. Then, spend the day at your leisure in the Mayflower spa or exploring the beautiful surrounding area of Litchfield county. Conclude your evening with an incredible coursed dinner prepared by Chef Mads. This intimate experience will showcase Chef Mads' talents paired perfectly with wine selections from our sommelier.

Meet Chef Mads Refslund

Mads Refslund is a Danish chef living in New York City and an advocate for New Nordic cuisine/terroir-based kitchen. His recently released first cookbook emphasizes his belief that anyone can create treasure from waste food. Together with Rene Redzepi and Claus Meyer, he co-founded Noma, which would go on to receive 2 Michelin Stars and was four times ranked the best restaurant in the world (2010, 2011, 2012, and 2014) After leaving Noma, he opened his next endeavor, Restaurant MR in Copenhagen. MR received a Michelin star within its first year and was voted one of the best restaurants in Denmark.
