Gramercy Tavern’s Executive Chef Michael Anthony returns to Chileno Bay. He believes a cook’s job is to create delicious flavors and healthy meals. Passionate about using ingredients that can be traced to their sources, Chef Anthony emphasizes the importance of local farmers. With an abundance of locally-grown produce, Cabo offers the perfect destination for Chef Anthony to showcase his plant-forward approach. In March, he will join the culinary team at Chileno Bay as a guest chef.

Chef Anthony studied cooking at the École Supérieure de Cuisine Française (ESCF) - Ferrandi and began his culinary career under the guidance of Shizuyo Shima in Tokyo, Japan. He is the recipient of several culinary accolades, and is the author of “The Gramercy Tavern Cookbook” and “V is for Vegetable: Inspired Recipes & Techniques for Home Cooks - from Artichokes to Zucchini.” Under his leadership, Gramercy Tavern earned three stars from The New York Times twice, as well as the James Beard Award for “Outstanding Restaurant.” Additionally he has earned the following recognitions: Food & Wine's “Best New Chefs”, Bon Appetit's “Next Generation” and James Beard Award for “Best Chef in New York City” and “Outstanding Chef”.
