Dig for Baja’s “chocolata clams”—often referred to as “Baja’s seafood candy”—to prepare a traditional fish and clam ceviche, and prepare a “pescado zarandeado” over a roaring wood-and-coal bonfire. Then enjoy the fruits of your labor on the beach along with a traditional mojito.
