From the Grange to Your Plate

Taste the Season

Bear is passionately rooted in the philosophy of elemental cuisine, focusing on a single, premier ingredient harvested at the perfect time and building a dish around it. Such a philosophy takes great care, which is why Executive Chef Anthony Stagnaro and Farm Director Nick Runkle collaborate daily to showcase the bounty of our culinary garden, the Grange. A key pillar of our culinary program, the Grange supplies fruits, vegetables, herbs and flowers that appear on Bear's menu in an array of creative preparations. When these ingredients approach their shelf life, techniques like pickling and fermenting ensure the season is captured for years to come.
