The Modestos | June 23, 2024

  • The Modestos, named in honor of Chef Norberto’s grandfather, embody a humble approach to cooking and community. Hailing from Federacion, Argentina, Norberto’s culinary journey began on his grandfather’s farm, where he absorbed the essence of traditional Argentine cuisine alongside influences from Italy and Spain. Noberto trained under renowned Argentine Chef Francis Mallmann as his right hand man and cooked with Mallmann at Gramercy Tavern and Chez Panisse.

Their ethos revolves around the farm-to-plate relationship, sourcing ingredients directly from local, ethical farms to minimize waste and honor the produce and animals they work with.

Renowned for their open-fire cooking style, they utilize custom-built grill equipment and improvised structures made from fallen trees and branches. Their cuisine, deeply rooted in Argentinian heritage, embraces seasonal flavors, nose-to-tail cooking, and inventive dishes that celebrate local offerings.
