Executive chef Will Nolan embodies the adventurous spirit of Telluride. He’s a former competitive Big Air and Slopestyle snowboarder whose very first job was at a hunting farm, where he collected and prepped game birds. He’s since worked his way up to head the culinary operations at the Viceroy Hotel in Snowmass, where he oversaw its signature restaurant, EightK, and slope-side eatery, Nest. Nolan now brings his award-winning culinary expertise delivering authentic, rustic cuisine with the pioneering spirit of the American West to Madeline’s dining program. He revels in establishing relationships with local farms and purveyors like Laid Back Ranch and Garry Gass Farm to source the finest Western Slope ingredients for his hearty mountain cuisine.
