Grange Harvest Mustard Dinner

With its carpet of bright yellow blanketing the vineyard rows, Napa Valley’s mustard bloom is a sight to behold. But more than just a visual feast, mustard plants serve as a beneficial cover crop to suppress winter seeds, prevent against erosion, and recharge the soil with nitrogen. In the Far East, mustard greens are often pickled, and used in soups and stir-fries. In the West, mustard seeds are ground and puréed along with white wine, vinegar, and salt to create the popular condiment.
