Inspiring Chef Cortney Burns

Chef Cortney Burns is the Inspiring Chef at Mayflower Inn & Spa, overseeing the resort's culinary program, including The Garden Room, The Tap room, and unique on and off-property epicurean experiences. Deeply inspired by the grassroots of New England’s culinary traditions, Chef Burns will lean into her global adventures and decades of fine dining experience as she curates the cuisine at Mayflower Inn and Spa, with an emphasis on locally-sourced and seasonal ingredients. Burns joins the team with experience working with prestigious names in San Francisco’s celebrated kitchens, like Quince, Café Rouge and Boulette's Larder, before becoming Nick Balla’s co-chef at Bar Tartine and eventually headed east to open Tourists, a 55-acre hotel property in North Adams, Mass. She is the co-author of “Bar Tartine: Techniques and Recipes,” which won James Beard Foundation and IACP awards, and sole author of “Nourish Me Home.”

Join us in our elegant dining space, The Garden Room, designed by interior designer Celerie Kemble. Overlooking the Shakespeare Garden, The Garden Room celebrates elegant rusticity with indoor and outdoor dining spaces inspired by the natural beauty of our property. With menus created by Inspiring Chef Cortney Burns, explore our seasonal tasting menus while dining in the countryside.
  • Breakfast: 7:30 AM to 10:30 AM (Monday – Friday)

  • Brunch: 7:30 AM to 2:00 PM (Saturday – Sunday)

  • Lunch: 11:30 AM to 2:00 PM (Monday – Friday)

  • Dinner: 5:30 PM to 9:00 PM (Thursday – Saturday)

The Tap Room

Join us in The Tap Room, our newly renovated casual dining destination featuring pub-style fare and quintessential bar snacks that pay homage to Northeast cuisine. The reimagined menu features elevated New England classics made with seasonal ingredients, enjoyed alongside fresh craft cocktails.
  • Light fare offered daily from 2:30 PM to 5:00 PM

Do Former Chef-in-Residence April Bloomfield on her experience at Mayflower Inn & Spa

When one door closes, another one usually blows wide open. And that’s exactly how Chef April Bloomfield ended up as chef-in-residence at Mayflower Inn & Spa, Auberge Resorts Collection from 2020 - 2021. After her beloved Manhattan gastropub The Breslin closed down last March per COVID protocol, the British-born chef found herself in a position she hadn’t been in for nearly 30 years. “I’ve been working solidly since I was 16, so of course I didn’t really know what to do with myself. I was going stir crazy and feeling a bit restless,” she says. “So when I got the offer I was in the right place to start spreading my wings.”

Do Celerie Kemble on her design vision for the Mayflower Inn and Spa

Kemble approached the redesign to Mayflower’s historic site with “great trepidation, respect and a sense of enthusiasm.” More than a hotel, she says the Mayflower Inn & Spa feels like someone’s home, with a sense of gracious hosting, comfort and personality. The idea was a refresh, not a demolition.. She picked out the things that were worth preserving, that had aged well and brought a sense of authenticity to the site, including mahogany four-poster beds and lamps, refectory tables, chinoiserie chairs, a papier-mache chinoiserie coffee table and game tables. She mixed in Scandinavian and colonial American design influences with sisal carpets, Turkish rugs, hand-crafted ceramics, wicker, as well as textiles from Schumacher, Sister Parish, and Penny Morrison.
