  • Gather for pre-dinner cocktails at 5:30 PM each evening throughout contemporary dining destination Itzam as you are transported to a novel fusion of the sleek speakeasy, complete with the Etéreo backdrop: a lush beachside oasis brimming with vibrant greenery.

MEET PRINCIPAL BARTENDER SONDRE KASIN

Principal bartender of Undercote Sondre Kasin will curate a robust menu of creative cocktails utilizing native Mexican ingredients, as he takes the helm of this captivating collaboration. A Norwegian-born and trained industry veteran, Sondre will lean into his Nordic roots to develop clean, classic drinks that complement the locally foraged ingredients and rich flavors found in the Yucatan Peninsula.
