About Chef Octavio Olivas
Chef Olivas is the founder of Ceviche Project, an intimate seafood bar in Los Angeles celebrated for its refined, coastal-inspired dishes like kanpachi tostadas and uni-topped scallops. Born in Mexico City, Olivas grew up spending summers fishing with his father—experiences that ignited his passion for the minimalist pleasure of fresh, raw seafood. Chef Olivas began by curating underground ceviche pop-ups across the U.S. and Mexico before opening his brick-and-mortar spot in Los Angeles, where he serves vibrant, Japanese-influenced Mexican dishes crafted right in front of guests.Chef Olivas plays with diverse ingredients inspired by his own personal story, making each dish a tribute to both heritage and innovation.
