Esperanza's Executive Chef Alexis Palacios welcomes some of the most celebrated chefs on the Peninsula to pay homage to the bounty of Baja California. This exclusive series of pop-up dinners features flavors unique to the peninsula and Mexico – using both time-honored and experimental techniques. Each dinner is the unique result of a collaboration between some of the best culinary minds in the region, set in our lush Agave Garden under the twinkling night sky. Tuesday, November 9: Chef Alberto Collarte of Grand Solmar

Originally from Santiago de Chile, Chef Alberto Collarte's passion for cuisine got started at an early age, cooking family meals with his father and grandmother. After studying at Culinary Santiago, he started his career in Jalisco followed by time as Chef de Partie of the Mexican/French restaurant Bianco with chef Roger Dreier. Shortly thereafter he was invited to head the kitchen at the restaurant Taninos in La Paz, Baja California Sur, then as a private chef aboard a yacht, where he traveled the world for more than seven years, accumulating an appreciations and knowledge of the indengeous ingredients and techniques of each area he visited. Today, Chef Collarte shares his culinary experience as Executive Chef at Grand Solmar Land's End Resort & Spa in Cabo San Lucas, Baja California Sur.

Tuesday, November 30: Maxi Rios of Toro Los Cabos

At the tender age of 18 Maximiliano Rios began working with Takehiro Onho, who would not only mentor him in Japanese cuisine, but Basque and Chinese cuisines as well for five years. Originally from Buenos Aires, Maxi has studied and perfected his craft in kitchens from Miami to Dubai. Along the way, he added Peruvian cuisine and techniques to his repertoire. For the last six years, locals and visitors to Baja California have enjoyed his creations at Toro restaurant.
