About Chef Javier Plascencia

Chef Javier Plascencia's upbringing in the border town of Tijuana, Mexico, is reflected in his own interpretation of the cuisine of Baja California, a state that he promotes with passion by using ingredients from fields, farms and sea of the region. Javier began his career in his family's kitchen and has since remained a hardworking and enterprising figure within the Baja culinary scene. It wasn't until 2011, with Misión 19, that the chef defined the creative essence of this cuisine by consolidating his own style based on his journeys, creating his interpretation of California gastronomy. A year later the chef launched a new projects in Valle de Guadalupe: Finca Altozano, a restaurant complex settled o a vineyard. Recognizing the magical attributes of Baja, chef Plascencia created a pop-up restaurant under a 200 year old oak tree at the far end of Finca Altozano property called Animalón, which opened in 2017. That same year, Javier ventured south with the opening of Jazamango in Todos Santos. After 20 years of cross-border cooking, Chef Plascencia has witnessed a mix of cultures, which is now reflected in his approach to Mexican cuisine and continues to work to promote creativity in Baja California and Northern Mexico.

Saturday May 8: Special Dinner

Acclaimed Chef Javier Plascencia will travel south from Tijuana with his beloved Aunt Delores to join Chef Yvan in the kitchen. Mixing traditional Plascencia family recipes with Yvan's contemporary Latin-American twist, guests will enjoy a special oceanfront meal full of the rich flavors of Baja served family-style.
