Join us for an exclusive new Chef series at Chileno Bay Resort. Featuring a collection of Mexico's most innovative culinary trendsetters, who are paving the way in the contemporary world of Mexican cuisine. Combining traditional techniques cultivated since childhood with time-honored ingredients, each renowned Chef explores their individual art honoring their respective seasonal environmental rhythms. Each Chef collaborates with Executive Chef Yvan and his team to create one-of-a-kind dining experiences, for your enjoyment. We are honored to host each Chef and we invite you to indulge in a sensory journey of delightful Mexican cuisine.

Tomas Bermudez

TOMAS BERMUDEZ OF LA DOCENA OYSTER BAR AND GRILL

Born in 1983 in Durango, Mexico, Tomas’ love for food was born from accompanying his sisters and mother in the kitchen. Tomas’ professional culinary journey began in Buenos Aires, followed by internships throughout Europe. Tomas mastered barbecue, grill, and smoking techniques during his tenure at La Parrilla del Pobre in Bueno Aires. He furthered his skillset under Michelin-Star Chef Martin Berastegui in Spain, followed by learning the art of honest cuisine during his time at Chateaubriand Restaurant in Paris. Tomás’ kitchen is characterized by its honesty, product handling, and hidden techniques within seemingly simple dishes. In 2015, he opened La Docena in Mexico City, which is now one of the most acclaimed and socially responsible restaurants in Mexico.

Benito y Solange

BENITO MOLINA & SOLANGE MURIS OF MANZANILLA RESTAURANT

Benito y Solange have created a marriage around seafood with a Mediterranean style of cooking mixing Mexican culinary techniques to embrace and bring homage to the bounties of the Sea. Benito Molina graduated from the New England Culinary Institute (NECI), and is known for being a chef judge on the Mexican chapter of the Master Chef series. Solange Muris Graduated from North Carolina Central Piedmont Culinary Collage and in 2000 along with her husband Benito they founded Manzanilla Restaurant, one of the last decade’s three most important Mexican restaurants according to Life & Style magazine.

SATURDAY, DECEMBER 12: Dinner at Comal

Join us to kick off the Guadalupe-Reyes marathon with Chef Benito Molina and Chef Solange Muris, for a flavorful and refreshing cookout oceanside with our Chef Yvan Mucharraz. This marathon is not athletic at all. For Mexicans, this is a very commonly-heard expression once December rolls around. It starts on December 12th with the Virgin of Guadalupe Day and ends on January 6th with the Three Kings Day. It is called a marathon because in between those days we have celebrations one after another! 6:00 to 9:00 pm | La Playita. Jorge Vallejo of Quintonil

Born and educated in Mexico City, Jorge Vallejo began his professional culinary journey onboard Princess Cruises, followed by notable residences in Noma, Pujol, and the St. Regis Diana Restaurant. In 2012, Jorge and wife Alejandra Flores opened restaurant Quintonil, which has steadfastly represented Mexican culinary traditions since inception, currently ranking 24th of The World's 50 Best Restaurants since 2015, and 11th on Latin America's Best Restaurants list.
