Recipe: Gorditas

Enjoy Comal's favorite morning starter - the Gordita. Gorditas are similar to pita pockets but much heartier! It can be stuffed with just about anything! Start your morning dreaming of the picture-perfect views from Comal, the sound of the waves, and the instant relaxation.

  • 7 oz Clotted Cream

  • 1 tsp Vanilla Extract

  • 1 1/2 tbs Baking Power

  • 1 1/2 tbs Baking Soda

  • 4 Cups of Flour

  • ¾ Cup of Sugar

  • ½ tsp Salt

  • 2 Eggs

  • For the Butter:

  • 8 oz Butter

  • 1/2 tsp honey

  • 1/2 tsp lime juice

  • 1/2 tsp orange juice orange zest

Method: whisk the clotted cream until it fluffs. Add the eggs, the vanilla and sugar, and mix. Sift the flour, baking powder, baking soda, and salt, and gradually add to the mix. Mix with your hands or a spoon until the dough is soft and smooth, Cover the dough and refrigerate for at least 30 minutes. Flour a smooth surface. Knead until 0.4 in thick. Cut them with a round cookie cutter. Place the dough in a non-stick pan over low heat. Cook until brown. For the butter: Soften the butter and mix with all the ingredients. Refrigerate.
