Sabering, or the art of “sabrage”, dates back to the French Revolution when Napoléon and his army legendarily used their cavalry swords to expeditiously shear the tops off their bottles of bubbly while on horseback as they rejoiced in victory. Or, according to other popular lore, the ritual was developed by Napoléon’s officers to impress the young widow, Madame Clicquot, the first female champagne producer and proprietor of the famed Veuve Clicquot-Ponsardin champagne house, as a salute when they rode through Reims into battle. Either way, centuries later, this dramatic opening technique continues to be a festive crowd-pleaser that lends itself to kicking off any party with panache.
