Adventures in Mixology: the Caprese Daiquiri

When fresh, ripe tomatoes are abundant, the beloved Caprese Salad often comes to mind! The sweet, fragrant cherry tomatoes so plentiful in the Secret Garden at Calistoga Ranch inspired them to create this liquid homage to the Caprese Salad…
Here is what you’ll need to make this delectable libation at home:
- 4 cherry tomatoes
- 2 basil leaves
- 1/2 tsp. Balsamic vinegar
- Pinch each of salt & freshly ground black pepper
- 2 oz. white rum
- 1/2 oz. simple syrup
- 1/2 oz. fresh lime juice
- Herbed olive oil, for garnish
- A mini marinated mozzarella ball skewered with a cherry tomato and a basil leaf, for garnish
In a cocktail shaker, muddle the 4 cherry tomatoes with the 2 basil leaves, vinegar, salt and pepper. Add the rum, simple syrup and lime juice, fill the shaker with ice, and shake well. Fine strain into a chilled glass and garnish with olive oil and skewered mozzarella ball, cherry tomato and basil leaf.
The Bloody Mary put savory, tomato-based drinks squarely on the map – and the Caprese Daiquiri has proven itself a delicious departure from its cocktail cousin.
